Activity Flow:
1. (Approx 15 mins) Welcome, Introduction & Menu Overview. Arrive at the open-air venue, enjoy a welcome drink such as fresh young coconut water or local herbal tea, and receive an overview of the dishes you will be preparing
2. (Approx 45 mins) Spice Mastery. Learn about essential Balinese ingredients such as galangal, turmeric, ginger, aromatic roots, and local chilies. Practice peeling, chopping, and grinding the ingredients using traditional stone pestles and mortars (batu cobek) to create foundational yellow or red spice pastes (bumbu dasar)
3. (Approx 60 mins) Hands-On Preparation & Cooking Core Dishes. With your spice pastes ready, begin preparing the main dishes under the close guidance of the chef, following the daily menu
4. (Approx 45 mins) Secondary Dishes & Traditional Cooking Techniques. Prepare companion dishes such as classic Nasi Goreng or vegetable curry while learning how to manage open flames or stove heat to achieve authentic flavors and textures. Discover professional plating tips and how to balance sweet, salty, spicy, and sour flavors
5. (Approx 15 mins) Kitchen Wrap-Up. Assist in clearing your station, garnishing the final dishes, and setting up the dining area with your freshly prepared creations
6. (Approx 60 mins) Dining & Recipe Handover. Enjoy a communal feast featuring everything you have prepared, served with warm steamed rice and homemade sambal matah, then receive printed or digital recipes to recreate the authentic flavors of Amed at home
