Mozaic is the pioneer of fine dining in Bali, presenting Indonesian ingredients through a refined culinary framework shaped by European technique. Since opening in 2001, the restaurant has been defined by an ingredient-led philosophy rooted in Indonesia’s biodiversity. Founded by Chef Chris Salans and guided today by his protégé, Chef Blake Thornley, the kitchen reflects two generations of craftsmanship, continuity, and a shared belief that Indonesian ingredients deserve to be explored at the highest level.
